LITTLE GEM SALAD 🥬 WITH ZA’ATAR ROASTED CHICKPEAS
Little gem lettuce tossed in a lemony yogurt mustard dressing (recipe below) topped with za’atar crispy chickpeas, cherry tomatoes, sliced radishes, avocado – all tossed in bread crumbs because breadcrumbs make salads so much better 🙃 By @kalememaybe
To make crispy chickpeas, rinse and drain and pat dry. Toss in olive oil along with garlic powder, onion powder, and za’atar (a Middle Eastern spice blend with thyme, oregano, sesame, sumac, and salt). Bake at 425 for 20-30 minutes, chickpeas should be crispy and golden
DRESSING (serves 2)
1 1/2 tablespoons Dijon mustard
1 big scoop Greek yogurt
Juice of 2 small lemons
Drizzle of olive oil
